Salão da Pastella

Uma das iguarias que é quase unanimidade em São Paulo é o pastel. O pastel de feira, como conhecemos. Foram os imigrantes Chineses ainda no século XIX, que como forma de adaptar seu costume de preparar Rolinhos Primavera, trocaram a farinha e o recheio, e também o formato, mas mantiveram o preparo de massa fina e recheada, frita em óleo, pastel!

A carne bovina agradou mais o paladar do Brasileiro e tomou lugar da carne suína dos rolinhos, e a massa de arroz deu espaço para a farinha.

Em São Paulo a Gastronomia já é globalizada há tempos. O pastel foi uma adaptação feita por imigrantes Chineses, mas sua popularização foi resultado da prática dos imigrantes Japoneses da década de 40, de se disfarçarem de Chineses, para não sofrer represálias pelo envolvimento do Japão com a Alemanha de Hitler.

Até um tempo atrás sempre tinha um Japonês, ou descendente servindo pastéis na cidade, depois com a ampla aceitação popular, outras etnias começaram a vender o salgado. O local mais conhecido para comer pastel em São Paulo é a feira livre. Estes mercados a céu aberto teve inicio no início do século passado na cidade e sempre teve em suas extremidades, barracas de “japoneses”vendendo pastel.

Para celebrar o aniversário da cidade destacamos o pastel, porém com evolução, assim como a cidade que se transforma sempre.

Os ingredientes são manipulados e preparados em uma cozinha central e distribuídos para os dois endereços embalados à vácuo e na quantidade que será consumida.

Os recheios, além de diferenciados são abundantes. No cardápio é oferecido desde tomate, ovo e mussarela até funghi, queijo brie, damasco e alho poró, apenas para citar alguns.

Os temperos também podem variar de ervas finas ou manjericão, alho frito, pimenta, orégano e salsinha. As receitas sugeridas são combinações como Lombo Canadense com Queijo Brie e Damasco, ou Mussarela de Búfala com Tomate e Azeitona, mas se o cliente preferir pode montar seu próprio recheio.

Também não faltam os pastéis doces. O local oferece embalagens para viagem e abastecem os escritórios próximos no horário do almoço.

One of the delicacies which is almost unanimous in São Paulo is the pastel. The pastel de feira, as we know it.
